Welcome guys to joyfulbite.info Today I am sharing a sprouted moong sandwich recipe for weight loss, ideal as a filling meal for breakfast, lunch or for dinner in your weight loss journey. Sprouted Moong Sandwich Recipe
So let’s get started with the recipe. For the recipe ingredients you need are mention below.
Ingredients
- 1 cup of sprouted moong dal
- 1 cup of chickpea
- 1 tsp roasted cumin powder
- 1 green chili
- 1 inch ginger finely chopped
- 10 cherry tomatoes
- ¼ of a capsicum chopped
- 1 medium sized carrot grated
- ½ an onion sliced
- 1 tsp black pepper powder
Preparing Filling
For the sandwich, I am using 1 cup of sprouted green moong dal. Into my steamer, I am adding in 1 cup of sprouted green moong dal. Cover and let it steam cook for about 3-6 minutes. About 6 minutes later, turn off the flame, open the lid and my sprouts are nicely steamed at this moment. Into a large bowl, add in 1 cup of cooked chickpeas also known as chana.
Soaked the chickpeas or chana overnight and then pressure cooked with little salt for about 15 minutes. Freeze in one whole lemon, 1 tsp sea salt or as needed I already added a little bit of salt while cooking the chana. 1 tsp roasted cumin powder and with a fork I’m lightly mashing the chickpeas.
Lightly mashed the chickpeas. Some chickpeas are staying intact. Into this add in the steamed green moong dal, 1 green chili and 1 inch ginger finely chopped, 10 cherry tomatoes sliced into half, ¼ of a capsicum chopped, 1 medium sized carrot grated, ½ an onion sliced, some fresh curry leaves and give this all a good mix.1 tsp black pepper powder and mix all this really well.
Green Chutney
To make green chutney, into my small chutney grinder add in a small piece of ginger, 3 small peri peri green chilies Green chili you can increase or decrease as per your taste.⅓ tsp black pepper powder.
Squeeze in 1 whole lemon, a handful of mint leaves, two sprigs or a large handful of fresh coriander leaves. I am just tearing the coriander leaves roughly and adding it in. ½ tsp roasted cumin powder, ½ tsp sea salt or as needed and I am going to transfer this to another bowl.
The best thing about green chutney is that you can make ahead and store it in an airtight glass container and it will stay good in the refrigerator for a couple of days. So this way it’s an ideal way to meal prep.
Sandwich
For the sandwich I am using 2 slices of bread. Spread green chutney on top of both slices of the bread. Place a generous amount of the high protein filling covered with the other slice and lightly press it down. Leftover filling can always be stored in an airtight glass container and it will stay good in the refrigerator for a couple of days.
This way It’s an ideal way to prepare meals. Toast the bread. Today I am using a toaster which can be kept on top of a gas stove. You can always toast it on a tawa or on a grill pan. So, I am drizzling in a little bit of wood pressed groundnut oil. You can use desi ghee instead.
Place the bread slice on the sandwich toaster and again drizzle a little bit of wood pressed groundnut oil on top of the bread slice. And cover. Place the toaster on the gas stove and toast both sides until done. Once both sides are done remove to a plate. I like to slice the sandwich just before serving. And my super healthy high protein sprouts sandwich is ready to serve.
